Banana “pancakes”

My son loves this recipe for breakfast, and somehow I managed to make him believe it is banana bread. I know, I am a bad mother, but one morning he asked to have banana bread for breakfast after watching Daniel the Tiger prep and eat some, and timing was not possible, so I made him this instead and he still calls this pancakes banana bread. On the show, the banana bread was heart shaped and since then (about 2 years ago) I try to make them heart shaped for him. I believe he has never had real banana bread, so he does not know the difference!

This is an easy breakfast to make and if you are like me and my son that we won’t eat on its own a a ripe banana, it's a good way to use them and don’t throw away food! Now that he sees a ripe banana, he tells me “mom this is a great banana for making banana bread”.

I’ve seen similar recipes online with fewer ingredients, but I prefer to add more to make it more fulfilling and nutritious.

Bananas are excellent source of potassium, magnesium and fiber among others. Although they are high in sugar when using them for this recipe it serves also as sweetener so there is no need in adding maple syrup or any other syrup to the pancakes. It is high in carbohydrates but since we add an egg to this recipe and flaxseed is well balanced in protein and fats, providing lasting energy.

Eggs are high in protein and high in complete amino acids and are high in omega 3 fatty acids. There is some evidence that pastured eggs like the ones used in this recipe are even higher in omega 3 fatty acids, vitamin E and lower in cholesterol. Other nutrients found on eggs are selenium, vitamin D, vitamin B12 among others which help with our skin, sight and preventing disease. Fore more info on other nutrients about eggs, click here. Also, recent findings have made nutritionist believe that eggs are not the bad guys for healthy adults as we thought before and in fact can have many health benefits.

I add just a teaspoon of flaxseed , a superfood very nutrient dense, that just like eggs, is a high source of omega 3 fatty acids. It also is high in ,magnesium, manganese, vitamin B1 among many other properties.

Oatmeal is an unrefined grain that might be easier to digest, has more fiber, more nutrients and lower glycemic index than other processed or refined grains. To make this recipe gluten free, make sure that the oats used are label gluten free.

Ingredients:

  • 1 ripe banana.

  • ⅓ cup of oatmeal

  • 1 Tbs flaxseed

  • 1 egg

  • If needed to help with thickness use a splash of your favorite milk.

Put all ingredients in blender until you get an even mix.

Heat a grill pan with a little of coconut oil.

Pour a little of the mix to create a pancake, cook for 1-2 minutes, turn, cook again and serve!
